Super Quick and Easy Brekkie Pancakes - truly these are so easy you can do them whilst half asleep. No special equipment needed and minimal washing up!
I usually make muffins but I avoid turning on the oven on these hot days and these cook in just a few minutes on the stovetop without heating the kitchen up.
- Banana - 1 ripe mashed
- Sultanas - 1/2 cup, soaked in 1/4 cup strong Chai liquid
- Almond Meal - 1/2 cup
- Eggs x 2
Make a strong cup of chai with 2 tsp of mix and 1/4 cup boiling water and brew for 5 mins, then strain liquid onto the sultanas in a bowl. (Then reuse the leaves to make a full cup of tea and drink it whilst you do the rest) 😁
Mash banana into the sultanas with a fork. Stir in almond meal till smooth. Optional - add a pinch of salt. Break eggs into middle and mix in with the same fork.
Drop dessertspoonfuls onto preheated cast iron or non-stick pan. Brown with medium heat on one side then turn over to do the other side. I do 2 lots of 4 pancakes.
Serve with fresh fruit & yoghurt or butter & lemon or whatever takes your fancy. The almond meal takes on several roles to flavour, sweeten and thicken. There is no added sugar but they are still sweet enough, especially at breakfast.
