Blue Butterfly Pea Flowers

This tea is fun! (and good for you :)

Naturally coloured a beautiful Blue, it will turn Purple and Pink if fresh lemon is added to change the PH.  It has a neutral flavour & mild aroma that blends well with other ingredients. Naturally High in Anti-oxidants. Clitoria ternatea L. or “Dok Ancan” is used in traditional Thai herbal medicine for good health & improved memory.

Add a small teaspoon or 4-5 flowers to hot water to make tea.  Do not use too much or the colour will be dark navy blue. Works well as natural food colorant for food recipes. Excellent in cocktails and will transform a simple gin and tonic if you drop them in when serving.
